Tofu & Soya dry Mix


Ingredients

  • 200 grams Tofu /Paneer
  • 1 Cup Soya granules, soaked in water and drained 
  • 2 tblspn Oil 
  • 1 tspn Cumin seeds
  • 1 tblspn Garlic finely chopped
  • 1 tblspn Ginger finely chopped 
  • 2-3 Green chili finely chopped
  • 2 large Onions, finely chopped 
  • 3 medium Tomatoes, finely chopped 
  • Salt To taste
  • 1.5 tblspn Coriander powder
  • 1 tspn Red chili powder 
  • 1/2 tspn Turmeric powder
  • 1/2 tspn Roasted cumin powder
  • 1.5 tblspn Coriander seeds roasted and crushed 
  • 1/2 cup Cashew paste
  • 1 ½ cup Milk
  • 10-12 Fresh mint leaves OR Coriander leaves
  • 1/2 tblspn Lemon juice 


Method
  • Heat oil in a non-stick pan, add cumin seeds and when they begin to change colour, add garlic, ginger and green chillies and sauté for 2 minutes. Add onions and sauté till the onions are lightly browned. Add tomatoes and salt and mix well. Cook for 5-6 minutes.
  • Cut tofu into small cubes. Add coriander powder, red chilli powder, turmeric powder, and cumin powder and coriander seeds to the pan and mix well. Add cashew paste and mix well. Cook for 3-4 minutes. Add milk, tofu cubes and soya granules and mix well. Cook till the mixture thickens.
  • Add mint or coriander leaves and lemon juice and mix well. Simmer for a minute
  • Transfer into a serving bowl and serve immediately.
