- Chicken cut into pieces -500 grms
- Oil -3 tbsp
- Spinach 1 bunch,
- Green chilli as per taste
- Cilantro or mint 1 bunch
- Cumin seeds - 1 tsp
- Bay leaf - 2 nos
- Ginger garlic paste- 1 tbsp
- Onion chopped- 1
- Tomatoes chopped -1
- Salt To taste
- Garam masala powder -1 tbsp
- Red chilli powder -½ tsp
- Turmeric powder -1tsp
- Coriander powder -1tsp
- Lemon wedges For garnish
- Wash the spinach thoroughly and boil in its own water. Leave spinach to cool.
- In a grinding bowl add boiled spinach, green chillies, cilantro and mint leaves. Grind all together into a fine paste.
- Heat the oil and add cumin, when it splutters, add bay leaf, , and sauté for ½ mint
- Add onions and sauté till soft. Add ginger garlic paste and sauté. Then add chopped tomatoes and sauté well.
- Add the chicken over high heat and turn around till opaque.
- Add the salt, garam masala and the red chilli powder. Coriander powder, turmeric powder and stir till well mixed
- Add spinach and sauté for 2-3 minutes.
- Adjust the thickness of the gravy as per your taste.
- Remove it in a serving bowl and serve hot.
